Vegan Walnut Pesto » Vegan Mother Hubbard ~  Last weekend I made vegan pesto, which turned out delicious. I used it on grilled veggie sandwiches and I turned the leftover pesto into a crust for some seitan nuggets. That batch is all gone, but there’s more basil ready to harvest. Pesto may become my go-to weekend dish for the rest of the summer.
