Buffalo chicken casserole: lbs chicken c buffalo sauce, 1 c ranch/blue cheese, c cheddar, 5 c shredded potatoes/hash browns, 1 can cream of chicken soup... im made this tonight for my family and they loved it... instead of potatoes i used noodles thought.
Cilantro Lime Rice 2 Cups Low Sodium Chicken Stock 1 Cup Jasmine Rice, Uncooked 1 Large Lime, Zested and Juiced (or 2 small) 2 Cloves Garlic - Crushed 2 TBS Butter, cut into small cubes 1 Pinch of Crushed Red Pepper 1 large handful of FRESH Cilantro (Must be fresh or frozen, no dried) chopped Salt and Pepper to taste
3 ingredient pesto chicken...good and good for you. Made this for supper and used chicken legs instead of boneless chicken...it was yummy! I served it with brown rice as there were lots of gravy from the pesto. Next time I make it, I will use the boneless chicken and serve it with pasta to soak up all the sauce. It was a bit oily but the flavour was great! Definitely a keeper!
