Baked Chicken Tortilla Roll-ups. 1 12 oz. can chicken 3 oz cream cheese 1 can diced green chilies 1/2 c corn 1 c. Mexician shredded cheese 4-8 shakes ground cumin 6 8 inch flour tortillas Drain chicken and combine with cream cheese. Stir in all other ingredients except tortillas. Place about 1/3 c. of filling in tortilla, roll up and place seam down on baking sheet. Bake 350 for 20-25 mins.
Easy chicken enchiladas! Roll up cooked shredded chicken and Monterey Jack cheese in tortillas (I add green chillis & sometimes jalopenos to mine) Boil 2 cups chicken broth and 2 tbsp of flour then lower heat and stir in in one cup of sour cream & 4oz green chillis... Pour over rolled enchiladas... Top with Monterey Jack cheese and bake for 20min on 350
Baked Chicken Taquitos 60 egg roll wrappers 1 large rotisserie chicken 2c brown rice (cooked) 2c. salsa 2.5c Mexican cheese 1 can of black beans 1c. frozen corn Mix all the ingredients together & place about 2-3 T. of chicken mixture onto wrap. Roll up and place on baking sheet. Also delicious on tortillas! Convection bake @ 350 for 20min.
Cilantro Verde Enchiladas:1 bunch Cilantro 2 cups salsa verde (green salsa or green enchilada sauce) 1 medium-large onion, quartered 1 jalapeno, seeded and sliced (keep some seeds if you like heat) 1 Tbsp chopped garlic (1-2 large segments) 1/4-1/2 tsp salt or to taste (this will depend on the salsa verde you use) 1 8 ounce cream cheese 10 tortillas
Yummy easy chicken pot pies! My Family's fav!! 1 can of chicken 4 oz cream cheese softened 1 T butter 2 T milk Dash salt and pepper one can veg all drained and Pkg. crescent rolls Mix all in a bowl except crescents...make a square out of two triangle rolls. Put 1/4 of mixture in each one. Fold up and bake 350 for 20-25 min.
