Ingredients: 9 eggs 1 1/4 cup skim milk 1 red pepper 1 yellow pepper 1 zucchini  1/3 yellow onion Parmesan cheese  Preheat oven 350° Mix eggs and milk  Chop veggies Add veggies to eggs and mix  Spray pans with coconut oil Scoop egg and veggie mix into muffin pans Bake in oven for 30 minutes Top with Parmesan cheese Broil for two minutes  Makes one large muffin and one small size muffin  Enjoy!
