Get 'em Now---> http://amongfriends.us/GeorgeStella.php ------------------------------- Spinach and Feta Chicken Breast Roulades Recipe courtesy George Stella / stellastyle.com Prep Time 20 min / Cook Time 25 min / Serves 4 Shopping List 2 tablespoons olive oil 4 boneless, skinless chicken breasts 3⁄4 teaspoon salt 1⁄4 teaspoon black pepper 1⁄2 teaspoon Italian seasoning 2 teaspoons minced garlic 1⁄3 cup feta cheese crumbles 11⁄4 cups thawed and drained, frozen chopped spinach 1. Preheat the oven to 400 degrees and grease a sheet pan with the 2 tablespoons of olive oil. 2. Pound the chicken breasts until about 1⁄3 inch thick at all parts. The easiest and cleanest way to do this is to place them into a food storage bag one at a time, close the bag and (carefully!) pound with a mallet, heavy rolling pin, or large can from the pantry. 3. Place pounded chicken breasts on oiled sheet pan and cover with salt, pepper, and Italian seasoning. Flip chicken breasts in the oil on the pan to coat well and disperse the seasonings to both sides. 4. In a mixing bowl, combine minced garlic, feta cheese, and thawed and drained spinach. Spoon an equal amount of the spinach and feta filling down each chicken breast lengthwise, packing it in a neat row for easier rolling. Roll the sides of the chicken breasts up and over the filling, until overlapping. 5. Flip breasts, so that the overlapping ends are down, and bake 20 minutes, or until chicken is thoroughly cooked through and slicing into one reveals no pink. George’s Tips | For great party appetizers: simply slice the roulades after cooking, into thin pinwheels and arrange on a large platter! Variation | Follow the recipe, but make this easier and “unrolled” by skipping the pounding process and baking the chicken breasts whole for 20 minutes. Place the oven rack in the second position from the top, preheat the broiler to high and spray the sheet pan with cooking oil. 2. Layout the zucchini slices flat onto the center of the greased sheet pan and spoon a small amount of sauce over each piece. Then place equal amounts of shredded cheese on each and sprinkle with dry oregano and olive oil. 3. Standing by the oven, broil for about 4 minutes or until cheese is bubbly and brown. Remove and serve hot. George’s Tips: When you first remove the zucchini slices they may appear undercooked but I assure you that within a minute after coming out of the oven the “carry-over cooking” will take care of that and they will be crisp yet tender and most delicious! Try topping these with your favorite toppings, just like a real pizza. Set the stove burner to medium or number 5 on the dial. 2. Evenly add the 3 cheeses to the center of the pan in a thin layer leaving an inch or so space around the inside so you can flip the fried cheese later. 3. Next sprinkle the cheese evenly with the oregano, salt and garlic powder and place the pan over the heat. 4. Cook the cheese for about 3 minutes until the bottom of the cheese when lifted at the edge to check is a golden dark brown. 5. Carefully flip the fried cheese and cook for an additional 2 minutes. Remove from heat, flip right side up onto a paper towel or napkin to drain excess oil and immediately cut into 8 wedges. Preheat the oven to 350°F. Spray a 1 1⁄2 quart casserole dish with cooking oil and layer the bottom evenly with the drained spinach. 2. In a bowl, mix the remaining ingredients until combined. Pour mixture into the spinach lined dish. 3. Bake for 35 to 40 minutes, until slightly browned around the edges and center is firm to touch. Serve warm, garnished with fresh basil and diced tomatoes, if desired. HINTS Try adding 1⁄4 cup diced bell peppers to the casserole before baking for extra color and flavor!
