Burrata Salad
Mediterranean flavours all combined and chopped together with some burrata and parma ham. It is delicious and ready in 10 minutes. Just chop some olives, sun dried tomatoes, salad leaves, burrata, parma ham. Drizzle some EVOO and sprinkle some sea salt & cracked black pepper. Combine and enjoy

I went with Itsu frozen Gyozas to have with the dipping sauce. Whilst I pan fried them I made the sauce.

Mix together the following

- 4 tbsp chilli oil
- 2 tbsp chopped spring onion 
- 2 tbsp chopped coriander
- 1 tsp raw sugar 
- 3 tbsp rice vinegar 
- 3 tbsp soy sauce
- 1 tbsp sesame oil

This dipping oil is also perfect to drizzle on egg fried rice.

Hot Honey Halloumi Salad made in 30 minutes
No salad leaves, just good chopped cucumber, tomatoes & red onion mixed with some charred corn and served with hot honey halloumi. A salad that is substantial and tasty. It also keeps well overnight. Viral Cottage Cheese Wrap
Cottage cheese Wrap/ Bread A high protein bread that tastes good and is GF. Blitz all the below 200 grams cottage cheese (i only had the reduced one) 2 eggs 1 large clove garlic 1 heaped tsp dried herbs Salt to taste Line a baking tray roughly 20 x 30 cm. A swiss roll tray works great. You want a thin layer for the most effective results. Bake in the oven at 180 degrees for 35 minutes to 40 minutes . Let this cool before using as a wrap. If its too thick it will break (still edible). If its undercooked it will break too (so make sure you cook it until its more golden). It may need some practice but its worth it. I had mine with some chicken and salad. This is perfect for healthy dinners and lunch time snacks.

Healthy 2 ingredient Caramel Sauce With Olive Oil
To make a caramel sauce with olive oil mix together equal parts EV olive oil and chilled maple syrup with a pinch of salt. I went with 1/4 cup of each. My maple syrup was in the freezer for half an hour before using. Good quality olive oil makes the flavour better. This isn’t your normal caramel sauce - it’s an alternative and I love it. I used an electric whisk to emulsify it. You can use a fork. The sauce will separate slightly when left. Just whisk it again. It takes really nice on vanilla ice cream. If you don’t like it, DONT through the sauce away. Change it to some salad dressing by adding some mustard, seasoning and lemon juice.
