Lemon Courgette Cake - 7 oz grated courgette drained on paper, 5 oz caster sugar, 1 egg, 4 oz veg oil, zest & juice 1 lemon - mix tog. Add 7 oz sieved plain flour, half tsp each Bicarb of Soda, Baking Powder, cinnamon, + hand-full raisins, and/or seeds/nuts. Oven mark 3 / 160c 45 mins until skewer comes out clean. Top with lemon butter icing or cream cheese frosting. Easy + can freeze.
