Gambas al Ajillo   40 medium-size raw, peeled shrimp, about 8 ounces 8 tablespoons olive oil  4 cloves garlic, sliced crosswise  4 slices dried chili pepper  2 tablespoons dry Sherry (optional)  Chopped parsley Pinch of coarse salt ...place the oil in a skillet with the sliced garlic and chili. Heat until the garlic begins to turn golden. Add the shrimp in a single layer. Cook them, stirring, until they turn pink, 30 to 40 seconds. Add the Sherry, if using, and cook 1 minute.
