Spiced Carrot and Lentil Soup
So tonight was my first weigh in at Group since 11 December. I was a little nervous after having a very enjoyable Xmas & New Year with lots of indulgence! I was therefore delighted with a gain of just half a pound and I remain at target-phew! It was lovely to meet so many new joiners at group and also hear more about the changes to plan, particularly the increase to two HEA choices per day. As a cheese lover it’s great news for me 😃 So my crustless quiches might just start being extra cheesy 🤣 A SW staple, crustless quiche😋 I have tried loads of recipes but have settled on the below as my preferred. You can literally add any veggies or meat that you like. Sometimes I precook bacon (with all fat removed) and other times I use ham/smoked salmon or even leftover meats. For the veggies again whatever you fancy, ones that work well are mushrooms, broccoli, tomatoes, asparagus, peppers. I have tried both cottage cheese and quark and like both equally. Ingredients Peppers, diced Spring Onions, sliced Mushrooms, sliced Tomatoes, sliced A couple of slices of ham torn/cut in to pieces 5 eggs (6 if they are small) 200g fat free cottage cheese Frylight Optional HEA cheese Method 1. Preheat the oven to 190°C/Gas 5 2. Prepare whatever veggies float your boat… today I used peppers, spring onions, mushrooms and cherry tomatoes. You can dry-fry or leave them raw, as I did. Add any meat you prefer, I used ham. 3. Whisk the eggs, beat in the cottage cheese and season 4. Spritz your dish with frylight. Pop the fillings in a flan dish then pour the egg mix over. 5. Bake for 30 – 40 minutes until set and golden. It’s optional to sprinkle some HEA cheese on – I used Mozzarella and I added it after the quiche had cooked for 20 mins.
