Lily's - Blueberry Peach Pie Summer in a slice! This Blueberry Peach Pie is a perfect blend of sweet, juicy peaches and vibrant blueberries—all wrapped in a flaky, golden crust! 🫐🍑🥧 Ingredients: For the Crust: 2 1/2 cups all-purpose flour 1 teaspoon salt 1 tablespoon sugar 1 cup unsalted butter, cold and cubed 1/4 to 1/2 cup ice water For the Filling: 3 cups fresh peaches, peeled and sliced 2 cups fresh blueberries 3/4 cup sugar 1/4 cup cornstarch 1 tablespoon lemon juice 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tablespoon butter, cut into small pieces For the Egg Wash: 1 egg, beaten with 1 tablespoon of water Instructions: Make the Pie Crust: In a large bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice water, a tablespoon at a time, mixing until the dough comes together. Do not overmix. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour. Prepare the Filling: In a large bowl, combine the sliced peaches, blueberries, sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Gently toss to mix and set aside. Assemble the Pie: Preheat your oven to 375°F (190°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie dish. Gently transfer the dough to the pie dish, trimming any excess. Pour the fruit filling into the crust, dotting with small pieces of butter. Roll out the second disc of dough and place it over the filling, or cut into strips to create a lattice top. Trim and crimp the edges of the pie to seal. Brush the top crust with the egg wash. Bake the Pie: Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbly. If the crust begins to brown too quickly, cover the edges with foil. Cool and Serve: Allow the pie to cool for at least 2 hours before slicing to let the filling set. Serve with a scoop of vanilla ice cream or a dollop of whipped cream. Pro Tip: To enhance the flavor, add a teaspoon of vanilla extract or almond extract to the fruit filling! 🍨 | Facebook
