ONE-POT HEALTHY ORZO recipe
10min Ingredients: • 1 tbsp olive oil • 1 cup diced yellow onion • 1 tbsp minced garlic • 1 can chickpeas rinsed and drained • 2 cups cherry tomatoes • 1 cup diced zucchini • 16 oz orzo • 6 cups water • 1 cup frozen peas • 2 cups chopped spinach • 1 tsp salt • 1/4 tsp pepper • 1 tsp garlic powder • vegan Parmesan Instructions: • 1. In a large pot on medium heat, sauté onion, garlic, tomatoes, zucchini and chickpeas for a few minutes. • 2. Pour in the orzo and water! You can start with 4 cups of water and then add 2 cups more if the orzo still isn’t tender. • 3. Turn stove and medium high and stir every 30 seconds until all of the liquid is absorbed. When it’s almost done, add peas and spinach. • 4. This should take about 10 minutes! Taste orzo when the liquid is abso
