It's a Friday treat with papaya / paw paw porridge. The bitter crunch of cacao nibs is lovely with the sweet fruit, a swirl of @coconutcollab natural yoghurt and a little scattering of coconut flakes. Chia power! I need a bit of extra oomph so this morning's porridge is chia with a spoonful of millet flakes. For the papaya topping, I've borrowed a @juliemontagu recipe from her Superfoods book; it has a hint of lime, along with cinnamon, ginger and nutmeg (and I threw in a little chopped avocado and vanilla bean paste). Ah rhubarb how I love thee! I made a rhubarb compote the other day (sweetened with a little honey) which was just crying out to be added to my porridge. It works really well with coconut - there's coconut milk and desiccated coconut in there.
