Eggplant Dip (Mutabal)
Mutabal is a delicious Levantine eggplant and yogurt dip similar to baba ganoush but with a richer and creamier texture. You can make it with smokey eggplants, and it’s a wonderful recipe to enjoy as an appetizer part of a mezze platter with freshly baked pita bread.
After many bake-tests and experimentations, I finally found a sourdough pizza dough formula that I love! It boosts a very thin barely-there crust and a soft and fluffy cornicione. It takes 3 days to make (mostly just waiting for good things to come), but one bite you know it’s SO worth it! LEMON BLUEBERRY TRUFFLES 🍋
Raw Cake Ingredients: 1 cup wild blueberries 1 cup walnuts 1 cup dates 3 tbsp gluten-free rolled oats 2 tbsp shredded coconut 1 tbsp chia seeds 1 lemon, juiced Frosting Ingredients: 1 cup cashews (soaked for about 30 minutes) ½ cup coconut oil, melted and cooled 3 tbsp maple syrup 1 tsp vanilla extract 1 lemon, juiced 2-3 tbsp warm water (as needed to help blend) 1. Combine the raw cake ingredients in a food processor until the mixture is firm. 2. Roll into balls and place on a lined baking sheet. Chill in the freezer while you make the icing. 3. Place all the icing ingredients into a blender and combine until the mixture is smooth. Add a little warm water as needed if the consistency isn’t smooth enough. 4. One of the most refreshing & delicious breakfasts ever!! It’s a must try, and it’ll be a regular this summer 😍 Ingredients: 1 cup coconut milk 1/2 cup sliced mangoes 1.5 tbsp honey (adjust as per sweetness preference) 2 tbsp chia seeds Extra sliced mangoes to top Instructions: 1.
