Zucchini Pie; my version is slightly different (2 cups Zucchini, 1/2 chopped onion, 2 eggs, 1 cup Bisquick Light, 1 cup cheese, 1/4 cup vegetable oil, and salt/pepper to taste). Have been making for 20+ years, and it's wonderful in the summer served with fresh sliced tomatoes. YUM!

Zucchini Onion Pie  Tried this one tonight with success.  I used two medium sized zucchinis when it called for 3 cups of sliced zucchini.  I baked it for 50 minutes instead of the 25-35 minutes recommended. I would suggest this as a dinner side dish or brunch course.
