Vegetable jambalaya: Cook 1 chopped onion, 1 chopped green pepper and 3 chopped stalks celery in a heavy pan with 2 tbs oil until translucent. Add 3 chopped cloves garlic, 1/2 chopped jalapeño, 2 large tomatoes, chopped, 2 bay leaves, 1 tsp paprika, 1 tsp garlic powder, 1/4 tsp cayenne, 1/2 tsp dried thyme, 1/2 tsp dried oregano, 1 tsp Worcester/soy sauce, salt, pepper; cook 2 mins.
