Plantain Tart Shells. 6 green plantains, 4 eggs, 5 T coconut oil, 1 t of cumin powder, 1/2 t salt. 1. Preheat oven - 400 degrees. 2. Peel & slice plantains, cut off ends, cut plantain in half, cut a slit lengthwise on peel & separate peel from plantain. 3. Place slices on cookie sheet & bake 20 min. until plantains are soft. 4. Allow plantains to cool. 5. Place ingredients in a food processor, run until a dough is formed. 6. Line inside of a greased muffin tin with a 1/3-inch layer of dough.
