Eggs in Pepper Boats Recipe - Jacques Pepin - "One day I decided to cook eggs in sweet peppers with a bit of cheese and cilantro. It made a great lunch dish. I used the long, pale green peppers sometimes called banana peppers. Poblano and cubanelle peppers also work, especially if you want to add a little heat."

Date and Oat Bars - deliciously ella. Makes an amazing chewy bar. Try slightly less dates next time as could cope with being less sugary. Only use half the recipe as it makes two pans worth.

Pickled Banana Peppers! I used sweet banana peppers but you can use pretty much anything – last year I used Hungarian Wax Peppers (WAY too hot for me), Keep in mind that the amount of peppers needed is an estimate. My suggestion would be to pick the peppers, slice and fill the jars and then calculate the amount of other ingredients accordingly.

I made this last week, and seriously? It's heavenly. My hard-to-buy-for Dad tried it, and asked me to make him a batch for his birthday. It's that good!
