Eggs Florentine is perfect for weekend brunch. Toast soft English muffins and layer wilted spinach, poached eggs and creamy hollandaise sauce. Season with cayenne pepper and nutmeg to give it that extra kick.
You can enjoy this easy vegetable curry as part of a spread of spicy dishes or on its own. I like to eat it with thick, plain yoghurt and a garlicky flatbread or two. A little mango chutney doesn’t go amiss either.
