Slow cooker, lazy dhal. Saw a great tip on reddit: before adding them to the cooker, one should 'bloom' the spices (including things like onion and garlic) in a microwave, to bring out the flavour! Easier than frying, and saves on washing up an extra pan :D
Easy Red Lentil Dhal Author: Pinch of Yum Prep time: 5 mins Cook time: 10 mins Total time: 15 mins Serves: 6 Ingredients 2 ½ cups red or pink lentils 5-6 cups of water (a large pot half full) 2 tablespoons curry paste ½ cup coconut milk ⅓ cup water 2 teaspoons salt ¼ teaspoon black pepper ¼ teaspoon cayenne 2 teaspoons curry powder ½ teaspoon turmeric 1 teaspoon chili powder 2 tablespoons sugar lime juice green herbs for garnish
This was a little effortful the first time, but I think, in the future, I'll be able to throw this together in about 20 minutes. Boil water, start rice in rice cooker, cook lentils, mix spices together in coconut milk. Once lentils are done, mix in spices/coconut milk. Then rice is done. BAM. Also, I cooked the rice with half water, half coconut milk, and salt.
