Shakshuka: Toast ½ tsp cumin seeds, add 190ml oil, 2 large sliced onions; cook 2 min. Add 2 red and 2 yellow peppers, cut in 2cm strips, 4 tsp muscovado sugar, 2 bayleaves, 6 sprigs thyme, 2 tbs flat-leaf parsley, 2 tbs fresh coriander; cook til coloured. Add 6 chopped ripe tomatoes, ½ tsp saffron, pinch cayenne, salt and pepper; cook on low 15 min.
