Totally from Scratch Rum Cake (with a 100% whole grain option)
This rum cake is made completely from scratch – there's no pudding or cake mix involved and it's even more delicious than the cake mix version! Can be made with all-purpose flour or with whole wheat pastry flour for a whole grain version.
We've been making this cake for holidays and special occasions for over 10 years (ok ok I really want cake is considered a special occasion ). I've used Appleton ions yes of Bacardi (one word..woah). My favorite variation is mixing the pecans in the batter to make cupcakes. I add the rum glaze to chocolate frosting and drizzle it over them...so freaking good!!!!
