Crunchy Shredded Roasted Cabbage with Parmesan and Breadcrumbs. Cabbage is a brilliant accompaniment to a roast dinner but it doesn’t have to be served steamed. This is the Chiappa way! It’s cheesy, crunchy and very Italian – what could be better than that?
Garlicky roasted cabbage steaks with a hint of fennel. I served it over a buttnernut, red rice, pine nut basil stir fry, with a dalop of homemade houmous I made with olive oil I brought back from Peru! It was really good, but *NOTE* I would cut down the salt quite a bit if I were to make it again. The cabbage crispy bits were delsih like cabbage chips!!
