Fish Cakes ~ We made this once, but Simon misread the recipe and didn't realise that you had to cool the fishcakes before you cooked them, so this ended up as...fish mush. We'll need to try this again sometime properly, when we have enough time.

I love cooking fish in a foil bag and have been doing it for years. It's a great way of cooking – it's healthy and, by keeping everything in a little bag, the flavours are beautifully intense. You can prep this in advance – but don't forget to write your loved one a little message, plus some cooking instructions, and attach it to the foil. A lovely thing to find waiting for you in the fridge.

Salmon and potato bake. This was delicious - just be sure to add your own seasoning as there isn't much detail around seasoning and it might otherwise be bland as the reviews mention. I used some fresh rosemary, oregano and parsley and topped with freshly ground pepper, turmeric and paprika. Also good for people like myself who might not love the taste of fish, but like fish for the health benefits. Nice balance of flavours. :)
Cullen Skink is the tastiest soup on the planet. it's basically scottish chowder, I suppose. really simple but totally flavour-packed. smoked haddock poached in milk and cream with leeks and potatoes. I love it made really chunky and served with crusty hunks of french bread.
