Instead of pasta I use 2 cups chopped baby squash (Costco). Bacon cooks first. Drain pan and cook chicken. Remove chicken and add squash, mushrooms, one chopped leek. Cook until soft and add bacon, chicken, and cheese.
Oven-baked risotto I halved the rice & stock (keeping the same ratio), and stirred in roast butternut squash, cooked chicken & parmesan when cooked. Perfect - so much more convenient than on the stove and cooked perfectly at these quantities. Just right for 2 good servings.
Chicken parmigiana .... I make an easier (and possibly healthier) version of this omitting the egg/breadcrumbs but - just grilling the chicken breast slices off with a thin coating of olive oil in my Georgie Grill Gadget !
