Based on Derik Hill's oatmeal and flaxseed bread (House of Bakes). Made with wholemeal spelt flour. I was a few ounces short on the spelt so made it up with Quaker rolled oats. Didn't do stretch and folds as outlined in recipe but punched dough down and allowed second rise. Very nice tasting bread, soft and moist.

1/3 cup rolled oats (not steel cut or instant) - I use Quaker rolled oats 6 oz Greek yogurt - I use Chobani 0% plain 1/2 cup almond milk (unsweetened or sweet- it’s up to you) 2 tsp chia seeds 1/4 tsp cinnamon 1/4 tsp vanilla extract 1/4 (or more) of any fruit your heart desires!! I’m having mine in the morning with blackberries, blueberries, and banana :)
