Deliciously Ella's Sweet Potato, Lentil & Coconut Curry // Serves 6 // 2 large sweet potatoes (approx 1.5kg); 2 cups black olives (replace with cashews +/or sultanas???); 500g lentils; 2 tins coconut milk; 2 tins tomatoes; handful fresh coriander; 1 tbsp turmeric; 1 tbsp cumin; 1 tbsp ground ginger; salt and pepper; 1 lemon // Serve with quinoa or couscous???

Pimp it up a little before serving, with a olive oil and a yogurt swirl, fresh coriander, some dry colorful spices (sparingly)  for the effect. Looks good doesn't it.
