I made this last week, and it is amazing! The red beans I was cooking weren't ready, so I skipped those and added some chopped artichoke hearts. I didn't have any cumin, so I skipped that. I did throw in some chopped tomatoes and spinach I had leftover from tacos the night before. We ate it by itself, with tortilla chips, and even wrapped up in a tortilla with sour cream. Yum, yum, yum!!!
