TIP FOR ALL CHEESECAKES: Spray the sides ONLY of your springform pan--that way the cake will separate from the sides so no more cracks. Also, even tho' it is a pain, always set pan into another pan with about 1" of water in it and let it set for 1 hour after you turn the oven off.
