This classic northern Italian recipe is a great way to serve aubergines. By layering them with Parmesan and tomatoes and then baking them you get an absolutely moreish, scrumptious vegetable dish. Great served with all sorts of roasted meats and with roasted fish as well.

Winter Vegetable Torte - basically layer thinly sliced sweet potato, butternut squash and any other vegetable that grabs you and layers of non greasy cheeses, pack it and bake. I put a combo of melted butter, parm and panko crumbs on top for the last 10 minutes for a bit of crunch...a big hit!
