Mini Christmas cakes

If you prefer a lighter fruit cake at Christmas then these individual muffin-sized cakes will fit the bill perfectly. Made with a simple all-in-one sponge cake mix they are so much quicker to make than a classic fruit cake too! To give the cakes a boozier flavour, soak the dried fruit in 2 tbsp rum or brandy for 1-2 hrs before adding to the sponge mixture. These delicate little chocolate cups are made with Michel Cluizel 72% dark chocolate. They can be filled with any flavour of cake and layered with fillings from my selection. Great topped off with fresh berries. These bite-sized cubes are 4cm square and perfect served as petit fours or a couple for dessert.

And finally, I love these Baked Bean Tin Christmas Cakes. Am currently saving small tins like crazy and have fruit onto soak.

Looks good...still don't do yogurt. I'll need to find a good substitute to provide the base. Maybe ice cream or sherbet and serve as a dessert. Individual Fruit Cups with Yogurt Plastic cups Wooden skewers Vanilla yogurt 1 Strawberry for each cup 1 Skewer of pineapple chunks 1 Skewer of watermelon 1 Skewer of cantaloupe Assemble and display on a pretty party platter.
