I make this Murgh hyderabadi regularly. It's the closest I've got to restaurant quality and with a spice grinder doesn't even take too long to prepare.

Hyderabadi Bagara Baingan / Stuffed Eggplants in a Nutty Masala Sauce a bit of work preparing the pastes, stuffing the eggplants and frying them. Super rich but rewarding on the palate :)
