Disco-slaw with spicy peanut dressing: 1 head of broccoli, cut into florets, stalk cut into matchsticks, blanched 45 secs. 200g shelled edamame or broad beans. ½ red cabbage & 200g brussels sprouts, shredded. 1 large carrot, grated. 10 radishes, thinly sliced. Mix with large pinch salt. 5 tbs peanut butter whisked with juice of 2 limes, 2 tsp honey, warm water; add finely chopped red chilli to taste.
