Kedgeree. Feeds four. Hard boil 3 eggs. Cook a medium size piece of smoked haddock in foil in oven for 15 minutes. In large plastic jug cook small chopped onion in butter for 1 minute in microwave on high. Add tablespoon medium curry powder and half pint coffee mug of easy cook rice. Stir well. Add two mugs boiling water and cook in microwave as per instructions on rice packet. Flake the haddock and chop the eggs. Rinse rice and mix everything together. Add lots of chopped parsley.
