This went down a treat. At first I thought I was pushing it with spring onion and mustard but neither overpowered the dish. It's worth getting Maris Piper potatoes instead of plain white potatoes for a lovely fluffy topping. Real comfort food and a blast of Omega 3 too.

The Hemsley + Hemsley answer to fried chicken, free from breadcrumbs and vegetable oil but crunchy, crispy, succulent and delectable. It’s called Pablo’s Chicken after our cousin’s boyfriend who’s a huge fan and didn’t think we could recreate a healthy version but was very pleasantly surprised!
