Carrot cake - What I love about this recipe is that it's healthy, but you still get to have icing. Made with whole wheat flour instead of white and substituted applesauce for the most of the oil. Didn't measure icing - just blended OJ and powdered sugar until I got the consistency I was after.
A rather pleasing carrot cake with lime mascarpone icing
This carrot cake is an exceedingly good cake made all the more pleasing by the twist of lime mascarpone icing. It's delicious, it works and it's better than any other carrot cake I've tried. I would normally bake this in a square or round cake tin, but for the picture I used a lovely old loaf tin and it came out looking gorgeous.
Sigrid's Carrot Cake with Cream Cheese Frosting from The Pioneer Woman - this looks like a GREAT balance of frosting and cake! Usually there is SO much frosting you can't taste the flavors in the cake. I'm going to have to try this.
