I chickened out and cooked them for slightly longer than you should (max 2 mins/side) so they were a wee bit chewy but I'll know for next time. Poured a lemon, chilli, garlic and ginger oil over them and served with pureed sweet potato
I didnt want to use the same recipe for the beer battered shrimp & fish so found this simple recipe? I loved it for the simple fact of how light the coating was. Didn't get too thick and over power the scallops! Even added a little Old Bay seasoning. Another thumbs up! Delish~
