Freezer jam is the best because it doesn’t take any canning skills to make. Usually you can just crush the fruit, add in the sugar and pectin, and then put it in some jars. That’s it.
Freezer Jam- 5 C crushed plums, peaches, or nectarines (about 3 lb fruit), 1/3 C fresh lemon juice (from 2 lemons) 2 1/2 C sugar, 1/3 C (1.75 ounces) powdered, no-sugar-needed pectin.- In med pot, combine fruit, lemon juice. Bring to boil over med high- Whisk together sugar/pectin; add to fruit, stirring until sugar mixture dissolves fruit returns to a full rolling boil. Boil 1 min, remove from heat.-Transfer to jars or bags, leaving a 1/2-inch space on top. Seal. sit at room temp 2- 3 hrs.
