Aubergine burger. My favourite vegan burger! I used traditional rolled oats (gluten free) instead of breadcrumbs, walnuts instead of pine nuts chickpeas instead of beans and white onion instead of red onion!
Can't wait to try this - Curried Eggplant, Lentil and Quinoa Burgers with Onion-Pepper Relish. Okay...I make a lot of vegetarian-vegan-bean burgers. My favorite uses red lentils and blue cheese, but I digress. These are wonderful albeit a bit time intensive to make. Serve them in a pita roll or just alongside a salad.
