Try these super quick, easy, spicy sweetcorn and potato fritters for a fun brunch, or just a lunch snack! They are quick to whip up and absolutely stuffed full of wonderful flavours and crunchy texture!
My daughter Lara really likes fritters. She often has them as a snack so I keep a supply of them in the freezer. To freeze them, wrap the cooled fritters in foil in a single layer with 2 fritters per packet. To serve preheat the oven to 180C/350F/160 fan and put the frozen fritters on a baking sheet. Bake for approximately 8 minutes, until hot. These sweetcorn fritters can also be made with gluten free flour.
