Rib Eye Steaks with Cowboy Butter

Cowboy/Hotel Butter on Steak. I grilled my steaks with salt and pepper. 3/4 cup softened, salted butter. Half a clove of garlic finely minced. A handful of parsley finely minced. A squirch of lemon juice. A dash of red pepper and a touch of black pepper... I think that's all I put in my impromptu version. Served with wedge salad and baked potatoes with broccoli and cheddar sauce. Perhaps a roll would have been nice.

On a large platter drizzle steaks with a 2-count of olive oil (about 2 tablespoons). Season with salt and pepper. Remove the leaves from half of the rosemary and half of the thyme. Sprinkle leaves on steaks; set aside. Preheat grill to medium-high. When the grill is ready, cook the rib-eyes about 7 minutes on each side for medium-rare. (Add another 2 minutes for medium.) Remove from grill and let stand for 5 minutes.
