Slow Cooke Veggie Stew recipe! Carrots, turnips, tomatoes, sweet potato, zucchini & chickpeas + large onion, 1 cup veg broth, 2+ garlic cloves, cumin, and red pepper flakes. Cook on low for 6 hours/high for 3 hours. Add the zucchini & chickpeas and cook 1 hour longer on low. Serve over black barley & brown rice. Toss in some shredded chicken for a non-veg option!
