SHRIMP CHILES RELLENOS W/CHEESE Ingredients: 6 roasted chile poblanos , 1 lb Shrimp clean & deveined. 1 Large onion, 4 Garlic cloves minced, Shredded Cheese chihuahua or mozarella , Oil or butter, salt and pepper to taste. First: Saute shrimp, garlic, onion in butter or cooking oil, salt, pepper. Stuff chiles with shrimp mixture, top with shredded cheese and bake til cheese melts. Serve with Mexican rice.
