My scrummy tortilla pesto pizza. Instructions - lay one tortilla on a baking tray - spread on a thinnish layer of sun-dried tomato pesto - then stick a second tortilla on top. Spread on a slightly thicker layer of pesto - sprinkle on oregano. Arrange toppings, in this case mushroom and green pepper. Then add mozerella cheese and finally sprinkle with cathedral city mature chedder. Bake for approx 20 mins on Gas mark 6. Have fun trying to remove from baking tray. Eat. Sigh.
