INVOLTINI aka BRACIOLA (little bundle) ~~~ involtini can be cooked with meatballs and sausage in a neopolitan-style tomato sauce, other sauces (sarsa aka succu aka sunday gravy), or sans sauce. the involtini, themselves, are thin slices of protein rolled with a filling (aka bruciuluni aka farsumagru aka falsomagro). the dish is usually served as a second course and when cooked in tomato sauce, the sauce is used to toss the pasta for the first course.
