Eggs, vegetables and herbs - a perfect meal combination. Then to round it all off, the tang of a strong cheddar or a milder goats’ cheese crumbled on top and then browned under the grill. For a cheese alternative try a tangy salsa verde or a basil pesto drizzled over the top of your frittata just before serving.
Rick Stein's Flamenco eggs with tomato and Serrano ham is what you might call Spain on a plate – a sum-up dish of everything we love about Spanish cooking: serrano ham, chorizo, pimentón, tomatoes, garlic and onion. To these basic ingredients he's also added green beans and peas in this recipe from Rick Stein's Long Weekends, and you could also add sliced, cooked new potatoes or chickpeas or the big butter beans called judión.

Oh yes, this has the big American breakfast beat and this will keep you going almost all day. This is my favorite full throttle breakfast - not for light weights.
