Jamie's piccalilli

No ploughman's is complete without this. Let it mellow in a dark cool cupboard for 1 month before eating. This is the best piccalilli I've ever had. Pile it onto your plate with a ploughman's or spice up ham and colcannon with a generous dollop.

Very Fine Black Opal from Lightning Ridge, Australia. Vivid and very "present", this fine gem opal displays predominantly red play-of-color with spectral broad flashes of green, orange, yellow and blue, with true black potch to the reverse of the oval cabochon. This is as fine a stone for the serious collector as can be desired. Weighing approximately 10.39 carats and measuring 16.5 x 13.0 x 6.5mm Estimate: US$ 60,000 - 80,000 (£39,000 - 52,000/€46,000 - 62,000)

Squash and ricotta pasta bake

Squash and ricotta pasta bake Added in two red peppers and roasted them with the butternut squash; added in large onion & chilli flakes with the garlic. Used 3 very generous tbsp ricotta. Added in 80g chopped kale (which worked well) The sage leaves on top were delicious - use lots. Next time: use a very large butternut squash, add in even more veg, e.g. courgettes &/or mushrooms. I served it with steamed broccoli, but salad or green beans might be better.
