Salazar Ingredients: using 6 pounds of meat makes about 10 dozen tamales 3 pounds each pork & beef roast 2 large onions 4 cloves garlic 1/3 to chili powder or more salt, pepper & cumin 8 cups masa harina 2 cups shortening or lard Corn husks (2-3 packages for full recipe)

Beef Tamales

Pork is the traditional filling for tamales in New Mexico, but since we use pork in Carne Adovada, we chose beef filling for these tamales. Adjust the ground chile for more or less heat as you prefer. If this recipe makes more tamales than you need, freeze for up to a month.
