My Mahi Mahi recipe: lemon zest, lemon slices, a dollop of butter on each fish, garlic salt, sea salt, and pepper to taste, slivers of garlic and rosemary on each fish. Bake at 450 F for 12 minutes. Check fish frequently after the 12 minutes until fish is opaque and flaky.
Skinny Baked Lemon Dill Mahi Mahi: Not bad, but not my favorite. The mahi mahi filets from Whole Foods were frozen so that probably had a lot to do with it. The sauce was VERY lemony and strong so you could probably reduce the lemon juice by just a bit. I'll try it again with tweaks.
