Method of Preparation: 1. Steam Maine Lobsters, pick tail, knuckle and claw meat. Reserve lobster shells for stock & meat for plating. 2. In a large stockpot, cook SOBA noodles in boiling water until tender. Drain and reserve. 3. In a medium saucepan, bring mirin to a boil. Add tamari soy sauce, water, lobster shells and simmer until reduce by half. Then strain. 4. In a large bowl, combine Asian sauce, lobster meat, scallions, wasabi powder and toasted sesame seeds and serve.
