Greek Cypriot potato salad 🥗 𝑹𝒆𝒄𝒊𝒑𝒆 𝒃𝒚: https://www.instagram.com/superhomecook/ 𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔 🥫 * 1 kg baby potatoes washed skin on/peeled and cut into bite-sized chunks * 1/4 cup extra virgin olive oil * Juice of 1-2 lemons (adjust to taste) * 3 spring onions finely chopped * 1/4 cup chopped fresh parsley * 1/4 cup chopped fresh coriander * 1 tsp Salt and pepper * 2 tbsp freshly chopped mint * 1 tbsp dried oregano 𝑰𝒏𝒔𝒕𝒓𝒖𝒄𝒕𝒊𝒐𝒏𝒔 👨‍🍳 * Boil the potatoes in salted water until tender but still firm, about 10-15 minutes. In a large frying pan, sauté onions with some butter/oil and some salt. Once cooked through (about 7 minutes), remove from pan and set aside. 2. Coat your chicken with French onion soup mix. Heat 3. 3tbsp of oil in the same large frying pan and sear chicken on both sides (about 2 minutes each side) until nice and golden. Remove from pan. 4. In the same pan, add the rice and cook for 1 minute, stirring. Then add the stock, sour cream and salt some and bring to a simmer (3-4 minutes). 5. 543K views · 13K reactions | Creamy Marry Me Chicken Mash Pie Yes it may be 28c outside but it is the 1st of September, so it’s autumn, and cosy food season is here in my heart 😌🍂 This is one of the cosiest meals I’ve ever shared, and true to its name, I really do think it would make someone marry you 😂 It makes fabulous leftovers too, and is best served cosy on the sofa 🫶🏼 📌 Don’t forget to SAVE to give it a go ❤️ 📍 Serves 4 📍 476 Calories & 34g of Protein per serving ✨ 400g Chicken Breast, diced ✨ 1 Onion, diced ✨ 300ml Chicken Stock ✨ 100ml Single Cream (I used Arla LactoFree) ✨ 8 sun dried tomatoes, chopped ✨ 40g of grated Parmesan, plus 20g for the top ✨ 2 large handfuls of baby spinach ✨ 1 heaped tbsp of Cornflour mixed with 1 tbsp water. ✨ 2tsp each of dried oregano, paprika and garlic granules. ✨ 800g of Mashed Potato (I used @marksandspencerfood pre-made for ease, but of course fab if you make your own ❤️) - Spray a pan very well with some cooking spray and add in your onion and a pinch of salt; allow to cook over a medium to high heat, until softened. - Add in your chicken and fry for 5 minutes to get it well browned; add in your garlic granules, oregano and paprika and cook for a further minute, before pouring in your stock and your sun dried tomatoes. - Mix well and allow to bubble for a minute then add your cornflour slurry and allow to bubble for a few minutes to thicken up; add in your spinach, let it wilt, then add in your grated Parmesan and cream. - Mix until you have a silky smooth sauce before topping with your mash; spread it out into an even layer, being sure to fluff the edges up with a fork, and sprinkle over the remaining Parmesan. Bake at 180c (fan) for 30 to 35 minutes, or until the mash is golden and bubbling. Add beef stock and simmer for 5-7 minutes. Peel, dice and boil your potatoes in salted water until fork tender. Pass through a potato ricer. Add cream, butter, parmesan and egg yolks. Mix until combined. In a baking dish layer your meat and spread your mashed potatoes overtop. Sprinkle some more parmesan cheese. Bake at 350 for 20 minutes or until golden brown and bubbly. Ingredients: 6 tbsp. Butter 5 large Yellow Onions, thinly sliced 2 Bay Leaves 6 sprigs Thyme + more for garnish ¾ cup Dry White Wine 8 cups Beef Stock 1 1/2 tbsp. All Purpose Flour Salt & Pepper to taste 2 cups Gruyere cheese, freshly grated French Baguette, sliced 2 tbsp. Olive oil Method: 1. In a large dutch oven over medium heat, melt butter. 2. Add onions and a generous pinch of salt. Cook for about 10 minutes then add another pinch of salt and a pinch of sugar. Continue cooking and stirring occasionally for approximately 40-50 minutes until onions are caramelized. Be careful not to burn - they should be golden brown. 3. Once onions are caramelized, add flour and cook for 2-3 minutes. Then add wine to deglaze and bring to a simmer making sure to lift any browned bits off the bottom of the pot. Let cook for 1-2 minutes to allow the mixture to thicken. 4. Add broth, thyme, bay leaves, salt and pepper and stir to combine. Bring to a simmer and let cook for 20 minutes. Be sure to remove bay leaves and thyme stems. 5. Meanwhile, preheat the oven to 375 degrees. Brush baguette slices with olive oil and bake for 8-10 minutes then set aside. 6. Preheat the broiler and transfer soup into ramekins or small bowls and top with a layer of gruyere, 2 pieces of the toasted baguette, and another generous layer of gruyere. 7. Broil for 2-3 minutes until bubbling and golden brown. Most Sundays I cook up a whole roast chicken to use in dinners and lunches over the week. It saves money and tastes so much better! These only have 6 ingredients, they are ridiculously easy to make and when I say that they taste like a Greggs Chicken Bake...I mean they taste EXACTLY like a Greggs Chicken Bake! We have them with roast potatoes or wedges and some salad and it's a dinner we always look forward to. The recipe for this is below, let me know in the comments what you think! A x Makes 8 bakes 1 onion finely chopped 220g shredded/sliced roast chicken 2 tbsp flour 300ml chicken stock (using a whole stock cube) 70ml milk 2 sheets of ready rolled puff pastry Heat the oven to 190C (fan) Heat a drizzle of oil in a non-stick pan. Add the onion and fry for 5 minutes. Stir in the flour and a drizzle more of oil. Stir on a medium heat for a minute until the flour disappears. Slowly add the chicken stock a little at a time on a medium heat, stirring continuously. Add more stock when it starts to bubble When all the stock is gone, stir in the shredded roast chicken and add the milk Season with salt and pepper. Take off the heat and leave to cool. Cut the sheet of pastry in half lengthways and then into quarters widthways, so you have 8 equal rectangles. Place half the chicken filling on 4 of the pastry rectangles, leaving a gap around the edge. Lay the remaining 4 pastry rectangles over the top of the chicken. Lift the pastry edges towards each other and press them together. Work your way around the join with the prongs of a fork, then trim off any excess. Brush with milk or beaten egg and make some diagonal stripes with a dinner knife - being careful not to cut all the way through! Repeat with the rest of the filling and the other sheet of pastry until you have 8 Bakes. I love the flavour of Hunters chicken - bacon, roast chicken and bbq sauce...so I thought I'd turn it into an incredibly cheesy, incredibly delicious pie! If you haven't tried making a 'no dish' pie like this before, this is a really good place to start! I've written up the recipe below - let me know what you think of the series! A x Feeds 4 Oil for frying 6 rashers of smoked bacon 1 onion finely sliced 1 tsp smoked paprika 220g shredded roast chicken 100g bbq sauce 130g passata 125ml water 2 sheets ready rolled puff pastry 80g grated cheddar cheese 1 egg beaten Heat a drizzle of oil in a large, non stick pan. Add the bacon and fry on a medium heat, turning regularly until cooked through and starting to brown. Remove from the pan and set aside. Add a little more oil if necessary before adding the sliced onions Fry for 5 minutes until soft. Stir in the paprika for the final minute. Chop the bacon into 5cm pieces and add to the pan. Stir in the shredded roast chicken, bbq sauce, passata and water. Season with salt and pepper and bring to the boil. Simmer for 3 minutes, set aside to cool a little. Heat the oven to 190C (fan) Cut out a circle of pastry 25cm wide (you may need to roll out the pastry a little) Place the circle onto a lined baking tray. Spoon the filling over the pastry and spread it evenly, leaving a 3cm gap from the edge. Top the filling with grated cheese. Cut out another pastry circle 28cm wide (you may have to cut off the short end and attach it to the top end to make it big enough) Lay the pastry over the filling and press the edges together. Use the prongs of a fork to mark indents all the way around the join. Trim the edge to neaten. Brush with beaten egg. Use the blunt side of a dinner fork to make faint lines from the middle to the outer edge.
